5 leaves from a head of green cabbage, washed and chopped finely
1/2 a medium sized cucumber, washed and diced
1 small Granny Smith apple, washed, cored, and diced
1/4 small onion, minced
Juice from 1/2 a lemon
2 Tablespoons of olive oil
1/2 teaspoon ground ginger
1 Tablespoon of fresh basil paste or 3 T. chopped fresh
1/4 cup of peanuts, chopped
1 cooked chicken breast, shredded
1/4 to 1/2 teaspoon crushed red pepper
Salt to taste
Combine all ingredients and eat right away or let it marinate for awhile. By omitting the chicken you have a delicious vegan meal.
