From Jamie Dawn: New summer "salad"--I might not eat anything else for the next few months. You can thank me later.
On the Grill:
2 ears of sweet corn
1 large Poblano pepper
Once grilled, cut off the corn and peel, seed and dice the pepper (maybe wear gloves)
Add:
2 cups cooked and drained black beans
1/4 cup diced red onion
1 cup diced tomatoes (fresh is preferable)
1 large clove of garlic, minced
1/4 cup fresh lime juice
salt and pepper to taste
